Inside The Kitchen at The Bearded Dogg Lounge in Gaylord

“We get to play, we get to do whatever we want, and our menu changes seasonally, or sometimes in between seasons,” explained owner and chef at The Bearded Dogg Lounge in Gaylord, John Richardson.

It’s been a staple for about a decade.

You may recognize the unforgettable décor in the dining room, but John has completely recreated the menu.

“It’s like a brand new restaurant,” he said.

A dish that never disappoints is one of their newest appetizers.

“Their eyes open really, really wide,” he said. “Food is art, it’s very important that you’re able to express yourself.”

The best way to do that is to make everything from scratch.

“100% we make our own pastas, our sauces, our marinara, you name it we do it,” John said.

One step further, chef John doubles as farmer John.

He took over his family’s farm, and also grows herbs, fruits and vegetables next to the restaurant.

Some of those are added to his personal favorite dish, the lamb ragu.

Then it’s time for dessert.

Chef John says The Bearded Dogg Lounge has not repeated a flavor of crème brulee in two years!

Dessert or dinner, Sunday brunch or soup, serving you means everything to him.

“My whole life, I mean I eat, breathe, and sleep it,” said John. “We really care about what we do, we put our heart and soul into this every day, it’s going to be something different and you’re going to love it.”
