Midnight Harvest: Gourmet and Garage Grown Mushrooms

Most people store cars in their garage but Matt Hall of Midnight Harvest has a better use — growing gourmet mushrooms.
“I run an indoor mushroom farm. Essentially growing mushrooms indoors 24 hours 7 days a week 365 days a year,” says Matt Hall. 

This is a dream job for Matt Hall — it’s where his passion for science and innovation collide. Matt grows approximately 120 pounds per week and sells Shiitake and Maitake locally to Red Ginger, Black Star Farms and the Boathouse.

Matt says after sterilizing and getting the fungi prepped and into the bag, the rest of his job is pretty straightforward. “Instead of having things you need to babysit all the time especially with plant houses – there’s a lot of moving parts. There’s not very many moving parts here which is really nice,” says Hall.

These versatile fungi compliment some of your favorite dishes. Matt says, “They really sauté nicely in a pan and really earthy tones. People say it’s that umami – that 6th flavor that we don’t get but we get from fungi.”
