Inside The Kitchen: Smoke & Porter Public House in Traverse City

It’s brand spankin’ new and we couldn’t wait to go Inside The Kitchen! is claiming space on the east side of town and, quite frankly, reinventing everything you know about barbecue. Chef Henry Bisson, wife Mindy and their staff have developed a menu focused on fare cooked right over the fire. It’s simple, slow food that combines natural flavors just as they were intended to be consumed. Our plate gets piled with a grilled beef tender with bacon-wrapped potato cake and bacon onion jam, plus house-made smoked veal sausage with mushroom conserva and haricot verts.
