Wild Mushroom Crepes with Sunnyside Up Eggs

2-4 Eggs Cooked Sunnyside Up

Sauce Ingredients:

  • 2 TB Butter
  • 10 oz Mushrooms, variety
  • 1 tsp Thyme
  • 1 garlic clove, minced
  • 1 TB parsley
  • 1 TB Butter
  • 1 TB Flour
  • 1C Heavy Cream
  • 1/4tsp Nutmeg
  • Salt

Directions for Sauce:

Melt butter, add mushrooms and garlic, cook until just tender. Add the flour and cook 1-2 minutes, then add the cold cream.  Season with thyme, nutmeg and parsley. Salt to taste.  Fill crepes with Mushroom Sauce and top with Sunny up egg.

Crepes Ingredients: 

  • 4 Eggs
  • 1 C flour
  • 1 tsp Salt
  • 1 TB Butter

Crepes Directions:

Mix together.  Using hot 10” skillet, pour 1/4th of the batter and tilt pan to spread evenly.  Flip crepe when edges become cooked. Set under a towel until use all the batter.
