Grouper Sandwich with Green Tomato-Cucumber Relish

Dressing:

  • 2 Jalapenos, roasted, peeled, deseeded and finely diced
  • ¼ C Buttermilk
  • ¼ C Mayonnaises
  • 2 TB Sour Cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp celery salt
  • ½ tsp lemon juice
  • Dash hot sauce
  • Salt and pepper

Relish:

  • 2 tsp sherry vinegar
  • ½ C plus 1 TB Olive oil
  • ½ cucumber, peeled, deseeded and finely diced
  • 1 green tomato, finely diced
  • 1 TB fresh Dill

Fish:

  • 1 ¼ C Panko Breadcrumbs
  • ½ C Milk
  • 1 egg, beaten
  • 1/4C Flour
  • 4- 4oz Grouper fillets
  • 4 Brioche Buns

Dressing:

In a bowl whisk together Buttermilk, Sour cream, Mayonnaise, garlic and onion powders, celery salt lemon juice and dash of hot sauce. Add jalapeno and season with salt and pepper. Set aside

Relish:

Whisk 1 TB of the olive oil with the vinegar. Add the dill, cucumber and tomato. Set aside.

Fish:

Heat a skillet with the olive oil.

Dredge the fish in the flour, shake off excess.  Dip the fish in the egg, then into the Panko crumbs.

Fry the fish over moderately high heat until golden brown.

To assemble:

Spread some Dressing on the bottom of the bun.  Add the fish, then the Relish.  Drizzle some more dressing on the top, then add the top of the bun.
