Inside The Kitchen at Birch Tree Bakery in Harbor Springs

Nicole Hall, the owner of Birch Tree Bakery, remembers it like it was yesterday.

“I remember I had this, like, little thing from kindergarten where they, like, ask you what you want to be when you grow up,” Nicole said.

She wrote “a baker.”

Now she’s living out her dream every day, scooping, weighing, folding and molding at Birch Tree Bakery in Harbor Springs.

The start was simple.

“I really just was craving a really good chocolate chip cookie and I couldn’t really find one that I liked anywhere,” Nicole said.

Three years of perfecting the recipe landed her here, at her own place, whipping up quarter-pound cookies daily.

“They’re not like they’re not over baked, so they’re still really soft and gooey and thick,” she said.

While the chocolate chip cookies will always hold a special place in Nicole’s heart…

There’s plenty more to please your sweet tooth.

“We do, obviously, our cookies, we do a lot of like breakfast baked goods, like our coffee cake and muffins, we do brownies,” she described,

Nicole says the maple walnut coffee cake sells out just about every day.

“The goodness of maple syrup combined with walnuts and deliciousness,” she said. “I feel like it’s a really Michigan thing.”

Birch Tree Bakery caters to your savory side too.

“This is our sausage and potato burrito, it’s eggs, cheese, sausage, bell peppers, onions and potatoes,” Nicole said.

And a freshly brewed espresso drink to wash it all down.

Wrapping her head around living out her childhood dream in her hometown is no piece of cake.

“I don’t really know how to explain it, I have been trying to since February but it’s like unexplainable,” Nicole said.

But one thing is for sure.

“I firmly believe that everyone should chase their dreams,” she said.
