Munchies with Monz: Easy Tex-Mex Cowboy Quesadillas

These Cowboy Quesadillas are loaded with flavor, and perfect for an easy meal during the week!

Here’s what you’ll need: Quesadillas

  • 1 package of chicken breast, shredded or chopped
  • BBQ sauce
  • 1 can of black beans, drained & rinsed
  • 1 can of whole kernel corn, drained & rinsed
  • 1-2 jalapenos, de-seeded & chopped
  • 1/2 red onion, diced
  • Cilantro, chopped
  • Garlic seasoning
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 lime
  • Flour tortillas
  • Mexican blend shredded cheese


  1. Cut up your chicken in small pieces & cook in a pan over medium heat. Add BBQ sauce to your liking & set aside.
  2. In a medium bowl add the black beans, corn, jalapeño, onion, cilantro, and garlic seasoning (to your liking). Dress the mixture with your white wine vinegar, olive oil, honey, and squeeze in the lime. This is your “cowboy caviar.”
  3. Heat a skillet over medium heat, place a tortilla down on the skillet, layer with cheese, BBQ chicken, cowboy caviar, add some more cheese on top. Once the cheese starts to melt on the bottom, add another tortilla on top.
  4. Cook for about 2-3 minutes & carefully flip the quesadilla. Cook until the tortilla is golden in color and crispy.
  5. Cut into 4 equal pieces & enjoy!
