Inside The Kitchen at Pigs Eatin’ Ribs in Charlevoix

“In barbecue competition everyone’s got a fun, cool name and we went with Pigs Eatin Ribs,” said the Charlevoix restaurant’s owner.

Adam Kline opened Pigs Eatin’ Ribs in 2012.

“This is one of our original dishes that we have made ever since we opened,” he said.

Back then Adam says it was a small food truck with a smoker out back.

“I wanted to offer the food truck as another option at festivals things like that,” Adam said.

You can still find the truck out and about, but now everything is smoked right here in house every day of the week for up to 14 hours, like the brisket in this chopped brisket sandwich.

“That’s our mustard barbecue sauce, it’s got four different mustards in it and components that make up the BBQ sauce,” he said.

Even the house made chips get a hint of BBQ.

“It’s the same rub that goes on all the meats, all the pork the ribs,” said Adam.

And to top it all off, house made pickles.

“With the sweet and richness of the barbecue sauce, the vinegar really cuts everything, the meats are so rich that the house pickles cut through it all,” he said.

Adam says the menu has come together over time, based on all their traveling.

“These are our pig marbles,” he said. “A traditional French dish is a croquet, which is like a fried potato, so I took a spin off of that…and just added barbecue to it and put our own spin on it.”

Mashed potatoes, pulled pork, cheddar cheese, breaded and deep fried to perfection, and there’s proof.

“We have had a line out to the door and people wait, people don’t mind waiting in line to get good food,” he said.
