Cracked Wheat Salad with Pomegranates and Pistachios

Ingredients:

  • 1 cup cracked wheat, soaked until soft then and drained
  • ½ C plain Greek yogurts
  • 2 tsp lime juice
  • 2 TB sugar
  • ½ C pomegranate seeds
  • ½ small red onions diced fine
  • ½ C pistachios, shelled
  • 2 C baby arugula or spinach
  • 2 oz. fresh mint leaves
  • 8 oz. cubed feta cheese

Directions:

Whisk together the yogurt, lime juice, and sugar.  Set aside.

Combine the wheat, pomegranate seeds, onion, pistachios, arugula and mint in bowl.  Toss lightly with the yogurt dressing and top with feta cubes.
