Potato Latke with Ricotta and Orange Marmalade
Ingredients:
- 2 lb potatoes peeled, grated and drained of excess liquid
- 1 small onion small diced
- ¼ C flour
- 2 large eggs
- ½ tsp black pepper
- 1 tsp salt
- Vegetable oil
- 1 C Ricotta cheese
- 1/4 C parmesan cheese
- 1 tsp fresh oregano
- 2 tbsp. Orange Marmalade
Directions:
Stir together the ingredients and fry until golden brown in hot oil. Drain on paper towel. Mix together the ricotta cheese, Parmesan cheese and fresh oregano.
