Potato Latke with Ricotta and Orange Marmalade


  • 2 lb potatoes peeled, grated and drained of excess liquid
  • 1 small onion small diced
  • ¼ C flour
  • 2 large eggs
  • ½ tsp black pepper
  • 1 tsp salt
  • Vegetable oil
  • 1 C Ricotta cheese
  • 1/4 C parmesan cheese
  • 1 tsp fresh oregano
  • 2 tbsp. Orange Marmalade


Stir together the ingredients and fry until golden brown in hot oil.  Drain on paper towel. Mix together the ricotta cheese, Parmesan cheese and fresh oregano.
