Johnny Cakes with Spiced Cane Syrup

Spiced Cane Syrup:

  • ½ TB cardamom pods cracked
  • 1 tsp cumin seeds crushed
  • ½ tsp crushed red pepper
  • 1 C Water
  • 1 C Cane Sugar

Place ingredients in sauce pan and bring to boil.  Simmer until thick.

Corncakes:

  • 1 C flour
  • 1 C yellow cornmeal
  • 1 tsp baking soda
  • 2 tsp sugar
  • 1 tsp salt
  • 2 large eggs
  • 1 ¼ C Buttermilk
  • 1 TB parsley and 1 TB Cilantro
  • 1 inch ginger peeled and chopped

Directions:

Mix ingredients together until just barely mixed.

Heat oil until shimmering. Drop spoonful of batter into oil. Flip once. Drain excess oil on paper towel.
