Backcountry Gourmet: Meals to Take With you in Nature

Forget the hamburgers and hotdogs — you can camp in style with Backcountry Gourmet. Michael Gray with Uncommon Adventures has been a backpacking guide for over 35 years taking people across the country and world with their kayaks.

Over the years Michael has learned how to give his campers an elevated meal keeping their bellies full after a long day out in nature. “I sometimes find that they’re happier when you provide a good meal,” says Michael Gray.

Over the years people have craved his meals so he decided to put them all together in a cookbook for people backpacking and enjoying the outdoors. He took the time to show “the four’s” Madison Gardner how to make a Cherry Red Wine Pork Tenderloin and a Cherry Walnut Protein salad. Below you can find the recipes.

Pan Seared Pork Tenderloin in Cherry Red Wine Peppercorn Sauce

At Home: Prepare marinade and pour it into zip bag. Put the whole pork tenderloin into it. Squeeze out excess air and freeze solid.
In Camp: Prep Time- 30 Minutes/ One frying pan, one pot
Remove the thawed tenderloin from the bag. Drain the meat but reserve marinade. Coat bottom of a frying pan with olive oil and heat until smoking. Sear the meat on high heat in the frying pan for 5 minutes or so. Sear all sides. Reduce flame to medium-low and cover. Give it 10 minutes, then turn and give it another 10 minutes on the other side.
While the tenderloin is cooking, in a separate pot heat the reserved marinade to a boil. If you are in a large group add more pepper and red wine. Once a small amount of marinade is boiled off reduce the heat and add a bit of cornstarch to thicken the marinade to a glaze consistency. Serve it over the sliced meat.
Marinade ingredients: Dry Red wine, Worcestershire sauce, dried cherries, garlic cloves (crushed), cracked peppercorns, thyme.
Crunchy Cabbage & Cherry Salad
At Home: Package fresh veggies together in a breathable bag. Store dressing in an appropriately sized leak-proof plastic bottle.
In Camp: (prep time- 10 minutes/one pot): Combine everything about 15 minutes before you want to eat.
Ingredients: sweet onion (chopped), shredded cabbage, dried cherries, Cherry Walnut dressing, walnuts, blue cheese, black pepper.
