Cooking With Chef Hermann: Vietnamese Beef Salad

Vietnamese Beef Salad

Marinade:

  • 1 ½ TB Oyster Sauce
  • 1 TB Soy Sauce
  • 1 ½ tsp sugar
  • 1 ½ tsp cornstarch
  • 1 tsp fish sauce
  • ½ tsp black pepper
  • 2 garlic cloves, chopped

Mix and add to:

1 ½ lb steak trimmed and cut into 1 inch cubes.  Marinate at least 20 minutes. Heat 2 tsp oil and cook meat until seared and tender.  Mix quickly with salad (below)

Salad Dressing 

Mix together:

  • 2 TB water
  • 2 tsp canola oil
  • 1 ½ TB unseasoned rice vinegar
  • 1 ½ tsp honey or sugar
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  •  ¼ C thinly red onion

Toss with:

  • 4 Cups Salad greens
  • ½  Cup Grape Tomatoes halved
  • ¼ cup, each mint and basil leaves
