Connie Frieberg, Owner of and , demonstrates a couple hearty meals packed with protein and iron any donor might love to try in the weeks ahead of giving blood.

Brisket, spinach salad with tomato frittata, and hummus!

Blue Cow Spinach and Pepper Frittata

Ingredients:

  • 3 whole eggs
  • ½ cup queso fresco
  • ½ cup chopped red & yellow peppers
  • ½ cup chopped fresh spinach
  • 1tsp garlic
  • 3tbsp. heavy cream

Directions

Mix the ingredients together and bake in a small cast iron skillet at 350 degrees Fahrenheit for 30 minutes until the center is firm.

Blue Fish Kitchen White Bean Hummus

Blend the following ingredients in a food processor until smooth. Then chill for one hour.

Ingredients:

  • 2 cups northern white beans (reserve ½ cup bean juice)
  • ½ cup bean juice
  • 1 tbsp. minced garlic
  • 1 tsp. Sriracha sauce
  • 2 tbsp. lemon juice
  • 1 tsp ground cumin
  • 1 tbsp. tahini or peanut butter
  • 1 tbsp. olive oil
  • Salt and pepper to taste
