Hearty Brisket, Spinach Salad with Tomato Frittata and Hummus Recipes from Blue Cow Cafe

Brisket, spinach salad with tomato frittata, and hummus!
- 3 whole eggs
- ½ cup queso fresco
- ½ cup chopped red & yellow peppers
- ½ cup chopped fresh spinach
- 1tsp garlic
- 3tbsp. heavy cream
Mix the ingredients together and bake in a small cast iron skillet at 350 degrees Fahrenheit for 30 minutes until the center is firm.
Blend the following ingredients in a food processor until smooth. Then chill for one hour.
- 2 cups northern white beans (reserve ½ cup bean juice)
- ½ cup bean juice
- 1 tbsp. minced garlic
- 1 tsp. Sriracha sauce
- 2 tbsp. lemon juice
- 1 tsp ground cumin
- 1 tbsp. tahini or peanut butter
- 1 tbsp. olive oil
- Salt and pepper to taste
