Stuffed Baked Potato

Ingredients list

  • Potatoes
  • Olive oil
  • 1 onion
  • 1 lb. ground beef
  • 1 tsp. paprika
  • 1 cup chicken stock
  • 1 ½ tbsp. Dijon mustard
  • 3 tbsp. soy sauce
  • 8 tbsp. of tomato paste
  • 4 cups of raw broccoli


Wash potatoes and poke a few holes with a fork.

Salt and Pepper to taste and put in the oven at 425 degrees for about an hour.

While the potatoes bake, sauté one big onion of your choice in a couple tablespoons of olive oil in a big pot. Wait until the union is soft and fragrant.

Add salt and pepper with a pound of ground beef.

Add paprika and cook the meat through.

Add chicken stock, mustard, soy sauce and tomato paste.

Stir in broccoli and allow it to cook for about 5 minutes.

When the baked potato is finished, cut in half and ladle on top.
