Beet & Potato Latke

Beet & Potato Latke

– 1 large Potato, peeled and grated

– 2 Beets, peeled and grated

– ¼ C Flour

– 1 TB thyme leaves

– 2 Large eggs

– Salt & Pepper to taste

Method: Mix ingredients together in bowl.  Heat 2TB oil in fry pan.  Scoop and press ½ C of mixture into pan.  Fry for 5-7 minutes, flip and cook 5-7minutes, until done.  Serve with sour cream.
