Halibut Ceviche with Tomato and Cucumber

Halibut Ceviche with Tomato and Cucumber

1 garlic clove, chopped

¾ C Fresh lime juice

2 TB tequila

1 tsp agave nectar

½ C  pineapple, diced

1 tomato, diced

1 onion, diced

2 radishes, thinly sliced

½ jalapeno, fine diced

6 oz. Halibut fillet, cut into 1” pieces

1 avocado, cut into ½” dice

¼ C Cilantro, chopped

¼ C Mint, chopped

Mix garlic, lime juice, tequila and agave nectar in bowl.  Add pineapple, tomato, onion, radishes, jalapeno and Halibut.  Toss to coat.  Fold in avocado, cilantro and mint.  Season with salt.  Chill ten minutes before serving
