Asian Noodle Salad

Asian Noodle Salad

1 Lb Linguini, cooked

3- 4 oz. Chicken breasts, cooked sliced thin

½ C Celery, julienne

1 C Carrots, julienne

½ C Cilantro leaves, chopped

½ tsp. Ginger, chopped

1 tsp. Garlic, chopped

¼ tsp. red pepper flakes

¼ C Vegetable oil, plus 1 TB

¼ C Sesame seeds

1/3 C Soy Sauce

1/3 C Rice vinegar

3 TB Sugar

Mix together the vegetable oil, Soy sauce, Rice vinegar and sugar. Set aside.

Sautéed garlic, sesame seeds, red pepper flakes and ginger in 1 TB of oil, then add the carrots and celery. Cook until tender.  Add the chicken and linguini and warm until through-out.  Add the dressing and toss with the cilantro.
