Ingredients:
6oz. Veal scaloppini
2oz. blond bread crumbs
1 large egg whipped
1oz. flour
1 whole egg
6oz. Crisco (or canola oil)
4 thin anchovy strips
Salt, white pepper
Preparation:
Pound veal thin or have butcher do it.
Salt and pepper to taste.
Flour, egg, bread crumbs
Heat oil to 375 in pan
Fry egg sunny side up, set aside
Cook veal until done, dry with paper towel.
Serve with egg on top and anchovy strips arrange in a square around egg.
