Hearts of Palm and Avocado Salad

1 cup Yellow Cherry Tomatoes, halved
½ small Sweet Onion, cut into slivers
2 – 14 oz. Cans of Heart of Palm, Drained and Sliced ½ inch thick
1 Hass Avocado, cut into 1/2" pieces
¼ cup coarsely chopped flat leaf parsley
½ tsp. finely grated Lime Zest
2 Tbsp. Freshly Squeezed Lime Juice
2 Tbsp. Mayonnaise
2 Tbsp. Canola Oil
Salt and Freshly Ground Pepper

In a medium bowl, toss the halved cherry tomatoes and the onion slivers, hearts of palm, avocado and chopped parsley. In a small bowl, whisk the lime zest, lime juice, and mayonnaise with oil. Season the dressing with salt and pepper. Pour the dressing over the salad. Toss gently and serve right away.
