Real Mashed Potatoes with Heavy Cream

2 lbs Peeled potatoes
3 oz Unsalted butter
1 1/2 cups Heavy cream
  Salt and white pepper to taste
1 clove Pureed garlic


Boil potatoes with salt until soft. Drain all water. Add butter. Mash with potato masher. Add HOT cream. Whip with whisk (never use electric mixer), until fluffy and creamy. Do not "over-whisk" or potatoes will become paste. Some potatoes may need a little more cream.
